Gladiator Series

For starters, the Gladiator Series is our only series made with German steel- these knives all have characteristics common of German style knives (e.g., full tang and bolster). The high-quality steel has a hardness of 55+ which is the softest steel we use. The handle is made from pakkawood imported from Spain. The knives are robust, easily sharpened, durable and made from a thicker steel which prevents chipping. They are also larger knives, which provide more knuckle clearance when chopping. The angle of the blade is sharpened to a 16-18 degree angle, which is the largest of our three series. 

Phantom Series

The Phantom Series knives are made with Japanese AUS-8 steel, that has a hardness of 58+. The handle is d-shaped, so unfortunately these are not suitable for left-handed users. This series is probably our most nimble and light. There is less blade height and width, so careful use is required! The steel is sharpened to an angle of 12-14 degrees. This is our "in between" series. 


Shogun Series

The Shogun Series is made with high quality Japanese AUS-10V super steel, with a hardness rating of 62+ (the greatest of all our series'). The handle is G10 Garolite which is highly impervious to heat, cold and water. These knives are highly refined. The VG-10 steel is very hard which allows it to hold the sharpest edge, at 8-10 degrees. They require less frequent sharpening than the other two series but can be more difficult to sharpen for inexperienced users. They are also slightly more prone to chipping than softer steel knives (like our Gladiator series). They are a heavier knife than the Phantom Series. 


Omega Series

The Omega Series is our prized favorite among our Professional Chefs with many Home Chefs in agreement to its beauty and functionality. The Omega Series uses ultra-premium American forged BD1N-V hyper steel. The blade's composition and added vacuum heat-treatment to 63HRC. The laminated and hot-forged, ‘Liquid Metal’ pattern on the blade minimizes drag and is finished to 8-12° per side by expert blade smiths using the traditional 3-step Honbazuke method.

Crusader Series

The Dalstrong Crusader Series is a new collection of stunningly designed, all-steel knives, offering a minimalist aesthetic with unobtrusive beauty. Where are your knives made?

We use premium materials from different locations depending on the product (for example, our Shogun & Phantom Series uses steel made in Japan, and our Gladiator Series uses steel made in Germany and handles made of pakkawood from Spain.)  Our knives are painstakingly assembled by expert blade smiths in a state-of-the-art facility within YangJing, China (a city renowned for knife crafting for nearly 1500 years). Our Shogun Series specifically are crafted using imported Takefu Japanese AUS-10V super steel. The blades are heat treated, cold-rolled and annealed to reveal the layered pattern. Expert knife makers trained in traditional Japanese knife craft (the head foreman himself trained for years in Japan under a master tradesman) spend days on each knife, painstakingly hand-polishing and hand-finishing the blades and handles under strict guidelines using the 3-step Honbazuke method.  Honbazuke means roughly means "truer edge". Honbazuke honing originates from traditional Japanese knife production where the blade is sharpened and polished by hand in three careful stages: The blade is first coarsely ground using a vertically rotating sharpening stone, followed by a fine honing utilizing a horizontally rotating sharpening stone. The edge is then polished using a leather stropping block for scalpel-like sharpness. This is married with high-tech processes such as Cryo-tempering which improves the steels crystalline structure (making them stronger).  We are thus able to achieve exceptional quality but keep the costs of our knives lower for our customers.   We offer unparalleled quality AND support at pure value pricing.  If these were produced in Japan the costs would be significantly higher.  Our Chinese factory proudly stands head and shoulders above all others in YiangJiang, as our artisans (and lead foreman specifically) are on a personal mission to prove to the world Chinese quality can be world-class.
