"Excellent quality, is a very well made knife, also stellar packaging; you most certainly get what you pay for. Would recommend to any professional cooks, or chefs out there whom work or deal in a lot of meat preparation, and/or have the time to do so… Now, I say this because it’s not necessarily made for high paced meat cutters/butchers, the handle can get a bit slippery at times, especially when you’re working with a lot of pork, and/or bloody/fatty beef cuts/loins which you are breaking down into steaks/roasts. You just have to be a little more careful, and in time you learn to made it work. I mean that’s not to say this knife can’t be used for that specifically, once you break it in (specifically this knife handle and its edge) bc this knife will most certainly will hold an edge while also being pretty easy to sharpen/maintain; even with some of the cheapest whetstone out here, with a little bit of practice. I own three versions of these this specific knife from the shogun series, I after a few years of regular usage I must say personally that this knife can take quite a beat-down (if you will) from the elements and excessive use both on and off the job. Just don’t let other people/your inexperienced careless co-workers use it…lol, and with a little TLC this knife will last you a lifetime!"
