"I am 70 years old and bought 12 years ago a Sabatier knife set, including the wooden block (that I never used). It had medium quality knifes that I sharpened with a steel, so far so good. But WHAT A DIFFERENCE with this knife, great feel, weight and quality and super sharp. It is as they say, you get what you pay for. It won't take long before I buy a bigger knife to replace the Sabatier knife, for sure!"

"I have been a huge fan of Victorinox boning knives for a long time. Use them for everything, from skinning, game to fleshing hide, and processing meat. A friend of mine bought a couple Dalstrong knives and I tried them out. I am switching all my knives to Dalstrong. The blade has a touch of flex over the same victorinox style that is nice. It still has rigid strength to get harder jobs done. Yes I use these knives for things they are not recommended for and they stand up. Splitting briskets, opening bone joints etc. I tend to use one knife all the way through for every job when butchering."
