This is a nice

"This is a nice knife for the most part. I bought it for work and I am a professional Chef. It's sharp and well made. My issue is. Well there are two very annoying issues. When I am slicing anything, my knuckle hit the cutting board before the heel of the knife does. So, there is a pretty good size void that is annoying. The second issue is pretty dangerous. Being a chef I go through a lot, I mean A LOT of butter. The way the tip of this blade is made, my hand just slips right off of the blade when I am cutting butter. Like a slide. Right down the slope and right down to the very sharp tip. Even with a towel my hand slides to the tip and my fingers under the blade. I took it to work once, never again, just not practical for a professional kitchen. Looks cool and I got a lot of compliments and looks. Definitely stands out, just sucks at basic tasks that I really NEED to have trust in my knife to be safe. For a great professional chef knife, to be honest, stick with the Gladiator series. I have a Gladiator chef knife and it's perfect. I just wanted something more flashy and to match my Centurion Cleaver ( which I LOVE 💗 great cleaver!!!!)"

Probably my favorite knife

"Probably my favorite knife in the kitchen. The handle is really comfortable and the balance feels great. Nice for slicing and overall prep as a chef knife and cutting tonkatsu. The only drawback is it's height due to the design, but I partly bought it for appearance; if you're slicing thin delicate strips, it's more difficult to get a finger over it to secure the other side of the meat and pull through, so it's not practical for smaller hands so my wife never uses it. I don't use it for heavy chopping but I'm sure it could handle lighter tasks in that area, i just prefer to preserve the edge since I have a cleaver."

"This whole Centurion series is a work of art. The Crixus being my favorite. Perfect balance between chopping, cutting and slicing. The shape of the handle, and the balance of this knife, feels so natural. . . almost like a EXTREMELY sharp extension of my hand. The quality appears to be something that will last. Between the Swedish steel and 58 hardness, I expect it to hold an edge quite well. If I could only have one knife, this chef's knife/cleaver would be it."

The centurion series I

"The centurion series I feel is a very underrated series with many others being pushed. I have the butcher/breaking knife, the cleaver, and now the Crixus. I am most impressed with the feel of the handle and quality of the knives with the centurion series. My one issue with this one is I felt the edge could have been sharper out of the box. It may be thought that I am used to a Japanese style of quick chopping and this blade is much more suited to the German rocking motion. It did cut better when I adjusted my cutting motion. But the edge I can adjust and fix to how I like it anyway. Easy enough. Thank you Dalstrong for a such a wide variety of quality knives to choose from."
