SHARPENING & MAINTENANCE | HORNET

6 reasons Hornet is the better way to a razor-sharp edge.

Whetstones demand patience, pull-throughs can be rough on a good edge, and so dull knives stay dull. Here are six reasons the Dalstrong Hornet makes it easier, faster, and better for your knives.

It doesn’t damage a blade (like every other pull-through sharpener)

Pull-through sharpeners are fast, but they're aggressive, and your best knives pay the price. The refillable reservoir washes steel particles off the blade and wheels as you work, so every pass stays clean and easy on the edge. Hornet keeps the speed, but not the risk.

Hornet held steady on the worktop while a knife is sharpened

Razor-sharp in minutes.

The care of a whetstone at the speed of a pull-through. No soaking stones, no slurry to wipe up, no mess afterward. Bring a blunt edge back to razor-sharp in a few minutes, then get back to cooking.

The three Hornet sharpening wheels with the protective cover removed

Three grits for every stage of sharpening.

A proper stone routine means buying, storing and maintaining a coarse, medium and fine stone. Hornet puts all three on one base: the #180 wheel restores a dull edge, the #400 refines it, and the #600 polishes and hones.

No unnecessary steel stripping

Match the wheel to the job. A few passes on the fine #600 keep a good edge in shape between sharpenings. Save the coarse #180 for edges that truly need rebuilding. Less steel removed means more years from the knives you love.

Steady base. Steady hands.

The hardest part of a whetstone is keeping everything still while you guide the blade. Hornet's silicone feet grip the counter, the broad base stays planted, and the rubberized handle gives your free hand something solid to hold. All your focus goes on the edge.

Hornet held to show its sturdy body and aluminum base

Built to stay on the counter for years.

An aluminum alloy base and durable ABS body give Hornet a solid, reassuring feel from the first pass. A dependable companion for the knives you've invested in, and the cooking you plan to do for years to come.

Before you sharpen.

Will the Hornet work with my knives?

Hornet is designed for double-bevel blades with edge grinds from 9–18°. It is not suitable for blades more than 3 mm thick. Check the instructions and your blade specifications before use; contact Dalstrong if you are unsure about compatibility.

Do I need to use all three stages every time?

No. Choose the stage your blade needs. The coarse #180 wheel rebuilds dull edges and removes more steel. The medium #400 wheel refines and maintains; the fine #600 wheel polishes and hones. Follow the included instructions for technique.

What does the water reservoir do?

Water helps wash steel particles away from the blade and sharpening wheels during use. Fill, empty and clean the reservoir as directed in the included instructions.
